How about: "Sumptuous Mango Shrikhand: A Refreshing Dessert Delight"

The Mango Shrikhand – one of the most typical South Asian mithai sweets – is no more than the strained yogurt known as dahi, ripe mango puree and exquisite spices such as cardamom and saffron. It is a very basic dish and it can be served cold as it is sweet and has a bit of a sour taste to the taste buds which makes it ideal for consumption during hot weather or any weather for that matter, but especially during summer season for instance. Due to it being fairly plain and mildly or with very slight seasoning, it has spread to be a staple across the whole of India from the Gujarat state. Mango Shrikhand is a deserts that is loved by large number of people due to its creaminess, natural mango flavor and color, which makes it possible to say that it is a perfect meal to serve guests or those who love chilled sweet during hot Summer days.

Ingredients

2 cups of hung curd (strained yogurt)

1 cup of ripe mango puree

1/2 cup of powdered sugar (adjust to taste)

A pinch of saffron strands (optional)

1/2 teaspoon of cardamom powder

Chopped nuts for garnishing (like almonds, pistachios)

Method

Step 1

Firstly, preparing the hung curd I am going to start with hanging a curd at least for an hour or so. To keep the batter aerated and free of large bubbles, the formation of which is disfavored as it causes the cake to be heavy, use muslin cloth or paper towel and strain the batter into the basin using sieve over the cloth or the paper towel.

Step 2

Scoop the curd on the cloth and then drain it for a time of 4-5 hours or preferably leave the curd in the refrigerator for the entire night. This will assist in eliminating any softer feeling that might appear once you find your yogurt with extra moisture to end up with a thick creamy yogurt.

Step 3

Once the milk curd is well strained, then it can be decanted into another bowl and then ready to be mixed. Ladies and gentlemen, before starting add the mango puree, powdered sugar, cardamom powder and if necessary saffron strands.

Step 4

Mix all the ingredients together until they combine well and the dampness is good enough to mix. In order to get the best result that would please the appetite of all people who love sweet, it is advisable to taste the mixture and if the obtained taste is to sharp – sour, add more powdered sugar.

Step 5

It is then recommended to chill the shrikhand to anything between 1-2 hours before serving to form a kind of nougat from the mix. It should be set and served particularly hot and one has to garnish it with crushed nuts as this one has to be.
