Ingredients

2 cups cooked rice (preferably day-old)

2 tablespoons oil (vegetable or sesame)

2 cloves garlic, minced

1 small onion, finely chopped

1 carrot, diced

1 bell pepper, diced1 cup frozen peas

3 tablespoons soy sauce1 tablespoon hoisin sauce

1 teaspoon sesame oil (optional)

Salt and pepper to taste

Optional garnish: sliced green onions, sesame seeds  

Step 1

Add oil to a skillet or wok, and place over middle-head burner on an electric range or medium flame on a coal stove. Saute some minced garlic and chopped onion… until the onions are golden brown and the garlic has become aromatic. 

Step 2

Then you need to add the chopped carrots and bell peppers to the skillet. Stir-fry for about 2-3 minutes so that the vegetables soften slightly. Scooping the vegetables to the side of the skillet, then incorporate the vegetables.

Put the cooked rice and frozen peas on the skillet where you cooked the omelet. Finally, stir them together and use a fork to crumble and separate any rice balls that may have formed. 

Step 4

Set aside a small bowl with soy sauce, hoisin sauce, sesame oil if using – mix them together. Spoon it over the rice and vegetables before mixing properly to ensure all foods are coated. 

Step 5

Cook for another 2-3 minutes further while stirring occasionally to ensure that everything is hot and properly mixed. Season wisely and garnish with a pinch of salt and black pepper.

Optional: To add more aesthetics: decorate the dish with some sliced green onions and sesame seeds before serving.
