Shanghai-Style Vegetarian Steamed Buns Recipe

Ingredients

For the dough

2 cups all-purpose flour

1 teaspoon instant yeast

1 tablespoon sugar

1/2 cup warm water 

1 tablespoon vegetable oil

For the filling

1 cup diced mushrooms (shiitake or button mushrooms work well)

1 cup diced firm tofu

1 cup shredded cabbage

1/2 cup shredded carrots

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

Salt and pepper to taste

Method

Prepare the dough: In a large mixing bowl, sift the flour, add instant yeast and sugar into the mixture. Follow the order and start incorporating the warm water and vegetable oil and knead until the formation of a soft dough. On a floured surface, this dough should be kneaded for about five to seven minutes until it becomes smooth and elastic. Knead the dough and put it in a buttered bowl then cover with a clean cloth and let it rise in a warm place for one hour, or until it doubles in size. 

Make the filling: In a skillet, place one tablespoon of vegetable oil and set the heat to medium. Stir in the minced garlic and cook for about 1 minute until garlic is fragrant. Stir in the diced mushrooms and tofu and cook for another five minutes, until mushrooms are soft and tofu is golden. Now put the shredded cabbage and carrot, soy sauce, sesame oil, salt, and pepper into the pan and stir fry for an extra 2-3 minutes until the vegetables are tender. Take it off the heat and let the filling cool for a few minutes. 

Assemble the buns: First, knock back the dough which has risen and then cut it into twelve parts. Make each portion into a ball then, with the palm of your hand, flatten the ball into a disc. Put a spoon of the filling in the centre of each circle of the dough that you have prepared. Let the dough cover and fold the filling inside of it; then shape it into a round ball making sure that the edges of the dough are well pinned. Do the same with the remaining dough and filling. 

Steam the Buns:Place the filled buns onto a parchment lined steamer tray ensuring to leave some space in between each bun. Put the lid on the steamer basket and allow the buns to rise for the last 15 to 20 minutes. At the same time, place the water on the fire to boil in a steamer pot. When the water is boiling, place the steamer basket on top of the pot and steam the buns for 12 to 15 minutes or until they have expanded and are well cooked. 

Serve:After the buns have been steamed, transfer them onto a plate and let them cool slightly before eating. Now that you have prepared your Shanghai-style vegetarian steamed buns, eat it with your favorite dipping sauce or just enjoy it on its own!

Notes

Dough Consistency: The texture of the dough should be soft but should also be able to hold its shape when kneaded. If the dough feels too tacky, then a bit more flour is needed; if the dough feels too dry, then a bit more water is needed. 

Filling Variations: You can also swap out the vegetables in the filling for vegetables of your choice or include tofu for added protein. However, it is advisable to cut them into small pieces so that they can be cooked well. 

Steaming Time: Temperature the buns until they are cooked through and the buns are puffed up. It is advisable not to overcook the buns for they become very hard when overcooked. 

Storage: These steamed buns are delicious when served warm; however, they can be kept in an airtight container and stored in the refrigerator for two days at maximum. To reheat, steam in a pot and heat for a few minutes before serving. 

Dipping Sauce: You can serve this dish with your preferred sauce that may be soy sauce, chili oil or a combination of vinegar and soy sauce.
