14 oz block of extra-firm tofu


2 tablespoons nutritional yeast


1/2 teaspoon black salt (or regular salt)


1/4 teaspoon turmeric


1 tablespoon olive oil


For the Potato Hash


2 medium russet potatoes (peeled and diced)


2 medium sweet potatoes (peeled and diced)


1 medium red bell pepper (diced)


15 oz can of pinto beans (drained and rinsed)


2 tablespoons olive oil


Salt and pepper to taste


3 garlic cloves (minced)


For the Queso Sauce:


1 1/2 cups raw cashews (soaked overnight or boiled for 10 minutes)


3/4 cup chunky salsa


1/4 cup pickled jalapeños + juice from the jar


1/4 cup nutritional yeast


Salt to taste


Other Ingredients:


8 large flour tortillas


Optional toppings: avocado slices, vegan sour cream, pico de gallo, cilantro, hot sauce


Method 

Step 1: Prepare Ceso Sauce

First of all, blend soaked cashews, salsa, pickle green chillies, a little juice, nutritional yeast and salt in a mixi until it becomes a very smooth sauce. Then keep it on the side.


Step 2: Create Potato Hash

Heat a little olive oil in a large pan.


Now add chopped potatoes and sweet potatoes to it. Mix well in the oil and add salt and chill to the season according to the taste.
