1 cup of rinsed red lentils

2 tbsp olive oil

1 medium onion, minced

3 garlic cloves, minced

1 inch piece of ginger, shredded

1 Medium Tomato, Hand Chopped

1 tsp cumin seeds

1 tsp turmeric powder

1 tsp ground coriander

1 tsp garam masala

1/2 tsp red chili powder (or to taste)

4 cups water or vegetable broth

2 cups fresh spinach, chopped

Salt, to taste

Juice of 1 lemon

Optional: Chopped fresh cilantro, for serving

Step 1: Rinse Lentils


Wash red lentils really well in cold water until the water runs clear.

Step 2: Heat Oil
