Easy-to-make vegan and vegetarian curry that’s flavorful and healthy! This Lentil & Spinach Curry is a family-favorite, featuring loads of plant-based protein and colorful spices. It’s great for busy weeknights where you want something fast, yet impressive.

With shelf-stable ingredients like red lentils, spinach and fragrant spices, this is a curry you can make anytime. Pair it with rice, quinoa or flatbreads for a healthy dinner that will please everyone.

Ingredients


1 cup of rinsed red lentils

2 tbsp olive oil

1 medium onion, minced

3 garlic cloves, minced

1 inch piece of ginger, shredded

1 Medium Tomato, Hand Chopped

1 tsp cumin seeds

1 tsp turmeric powder

1 tsp ground coriander

1 tsp garam masala

1/2 tsp red chili powder (or to taste)

4 cups water or vegetable broth

2 cups fresh spinach, chopped

Salt, to taste

Juice of 1 lemon

Optional: Chopped fresh cilantro, for serving

Instructions


Step 1: Rinse Lentils


Wash red lentils really well in cold water until the water runs clear.

Tip: Quickly rinse lentils in an efficient way with a fine-mesh strainer.

Step 2: Heat Oil


In a large pot or pan, heat olive oil over medium heat.

Step 3: Sauté Cumin Seeds


Then, drop cumin seeds into the hot oil, and let them sizzle for 30 seconds, until fragrant.

Tip: Toasting spices makes their flavor bloom.

Step 4: Add Onion


Stir in the chopped onion and sauté until golden, about 3-4 minutes.

Step 5: Add Garlic and Ginger


Add minced garlic and grated ginger and stir. Cook until fragrant, about 1 minute.

Step 6: Add Tomato


Stir in the chopped tomato, and cook 2-3 minutes until soft and blended.

Tip: Try mashing the tomato with the back of a spoon for a smoother base.

Step 8: Add Lentils


In a large pot, heat 2 tablespoons olive oil on medium-high heat, add the rinsed lentils, and stir to coat lentils in spice mix.

Step 9: Add Liquid


Add the water or vegetable broth and stir.

Tip: Broth will yield a heartier flavor.

Step 10: Simmer


Cover and reduce heat to medium, then simmer for 20–25 minutes, until the lentils are cooked but still slightly firm, stirring occasionally.

Tip: If your curry thickens, add more liquid.

Step 11: Add Spinach


Add the chopped spinach and cook for 2-3 minutes until wilted.

Step 12: Adjust Seasoning


Taste the curry and add salt as necessary.

Step 13: Add Lemon Juice


Add a squeeze of fresh lemon juice to the curry to brighten the flavors.

Step 14: Garnish


If you like, garnish with chopped cilantro.

Step 15: Serve


Serve hot with steamed rice, naan, or quinoa.
